Tofu Patties With Thai Salsa
- 1 (14 oz) can cannelini beans, rinsed, drained
- 10 oz firm tofu, drained
- 1/4 cup fresh wholewheat breadcrumbs
- 1 None red onion, roughly chopped
- 1/4 cup mint leaves
- 1/4 cup cilantro leaves
- 1 None medium egg, lightly beaten
- 2 tbsp teriyaki marinade
- 1 clove garlic, crushed
- 1/4 cup self-raising flour
- 2 tbsp oil
- 8 None Turkish rolls, split, toasted
- None None alfalfa sprouts, to serve
- None None cilantro leaves, to serve
- None None Salsa
- 3 None roma tomatoes, finely chopped
- 2 tbsp chopped cilantro
- 1 None small red chili, finely chopped
- 2 tbsp lime juice
- 1 tsp brown sugar
- Place beans, tofu, breadcrumbs, onion, herbs, egg, teriyaki marinade and garlic in a food processor. Process until smooth. Add flour. Process until combined. Chill.
- Heat oil in a medium frying pan on high. Spoon large dollops of mixture into pan (to make 8 patties). Cook for 2-3 mins each side, until firm, golden, and cooked through. Drain on paper towel.
- To make the salsa combine all ingredients in a bowl. Serve patties on rolls, topped with salsa, sprouts and cilantro leaves.
