Apple And Apricot Bread Puddings
- 4 medium Granny Smith apples, peeled and chopped
- 2/3 cup dried apricots, halved
- 1/2 cup sugar
- 1/2 tbsp ground cinnamon
- 6 slices white or whole wheat bread, crusts removed, cut into 3/4-inch cubes
- 3 tbsp butter, melted
- None None Whipped cream, to serve
- Preheat the oven to 350u0b0F.
- Combine the apple, dried apricots and 1/2 cup water in a large saucepan. Bring to a boil. Reduce the heat to low; cook, covered, for 15 mins until the fruit is softened. Remove from the heat. Stir in 2 tbsp of the sugar. Combine the remaining sugar with the cinnamon.
- Divide the fruit mixture into 4 small baking dishes.
- Toss the bread cubes with the melted butter and cinnamon sugar mixture. Spoon evenly over the fruit in dishes.
- Bake for 20 mins or until the bread topping is golden. Serve the puddings warm with whipped cream.
