Sticky Lamb And Mushrooms With Mash
- 2 lbs potatoes, peeled and cut into chunks
- 1 tbsp olive oil
- 1 1/3 lbs lamb loin chops, trimmed
- 7 oz button mushrooms, quartered
- 1 None onion, sliced
- 2 tbsp balsamic vinegar
- 1 tbsp wholegrain mustard
- 1 tsp sugar
- 1/2 cup milk, warmed
- None None Salad leaves, to serve
- Cook potatoes in a saucepan of boiling, salted water for 15-20 mins, until tender.
- Meanwhile, heat oil in a large skillet on medium heat. Cook lamb chops for 1-2 mins each side. Transfer to a plate.
- Saute mushrooms and onion in same pan for 3-4 mins, until tender.
- Combine vinegar, mustard and sugar in a small bowl. Add to pan on high heat, stirring. Return lamb chops to pan and cook for 3-4 mins.
- Drain potatoes and return to saucepan. Mash well. Gradually add milk, stirring to a smooth consistency. Season to taste.
- Arrange lamb chops and mushrooms on a bed of mashed potato. Serve with salad leaves.
