Sticky Lamb And Mushrooms With Mash

  1. Cook potatoes in a saucepan of boiling, salted water for 15-20 mins, until tender.
  2. Meanwhile, heat oil in a large skillet on medium heat. Cook lamb chops for 1-2 mins each side. Transfer to a plate.
  3. Saute mushrooms and onion in same pan for 3-4 mins, until tender.
  4. Combine vinegar, mustard and sugar in a small bowl. Add to pan on high heat, stirring. Return lamb chops to pan and cook for 3-4 mins.
  5. Drain potatoes and return to saucepan. Mash well. Gradually add milk, stirring to a smooth consistency. Season to taste.
  6. Arrange lamb chops and mushrooms on a bed of mashed potato. Serve with salad leaves.
