Date And Maple Loaf
- 4 oz finely chopped pitted dates
- 1/2 tsp baking soda
- 1/3 cup maple syrup
- 7 tbsp butter, softened
- 1/3 cup brown sugar
- 2 None large eggs
- 1 cup whole wheat self-rising flour, plus 2 tbsp, sifted
- 1/2 cup all-purpose flour, sifted
- None None Maple Butter
- 1/2 cup butter, softened
- 2 tbsp maple syrup
- Preheat oven to 350u0b0F. Grease an 8x5 inch loaf pan.
- Combine dates and 1/3 cup boiling water in a small heatproof bowl. Stir in baking soda and let stand for 5 mins. Stir in maple syrup.
- Meanwhile, in a stand mixer, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating until combined between additions. Add date mixture then stir in flour, in 2 batches. Transfer to prepared pan and bake for 50 mins. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
- Meanwhile, whisk ingredients for maple butter in a small bowl until combined. Serve loaf warm or cold with maple butter.
