Green Apple, Blue Cheese, Cranberry And Pistachio Salad
- 3.5 oz baby salad greens
- 1 None Granny Smith apple, halved, cored, cut into thin wedges
- 1/4 cup pistachios, toasted, cut into slivers
- 2.5 oz soft blue cheese, such as Castello, crumbled
- 1/3 cup dried cranberries
- None None FOR THE ORANGE DRESSING
- 2 tbsp orange juice
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp wholegrain mustard
- 1 clove garlic, minced
- Distribute salad greens and apple wedges between 4 serving plates. Sprinkle with pistachios, blue cheese and cranberries.
- To make the orange dressing, whisk together orange juice, olive oil, vinegar, mustard and garlic until combined. Drizzle over salad and toss to combine. Serve immediately.
