Zesty Chicken Burgers

  1. Combine the ground chicken, egg, sage and lemon peel in a large bowl. Season and mix well. Shape evenly into 4 patties. Cover and refrigerate for 20 mins.
  2. Heat 1 tbsp of the oil in a large skillet on medium heat. Saute the onion for 2-3 mins, stirring occasionally, until tender. Remove from the pan and keep warm. Wipe the pan clean.
  3. Dust the patties in seasoned flour, shaking off the excess. Flatten slightly. Heat the remaining 2 tbsp oil in the same pan on medium heat. Cook the patties for 4-6 mins each side, until golden and cooked through. Squeeze the lemon juice over the patties.
  4. Spread the mayonnaise on the bread and top 4 slices with salad leaves, onion and patties. Top with the remaining bread slices and serve.
