Fruit Salad In Spiced Syrup

  1. Place 1 cup water and sugar in a small saucepan on low heat. Stir until the sugar has completely dissolved.
  2. Add the vanilla bean and seeds, cinnamon stick and cardamom pods. Bring to a boil without stirring. Reduce heat to medium and simmer for 5 mins without stirring. Remove from heat and cool. Remove vanilla pod, cinnamon stick and cardamom pods.
  3. Pour cooled syrup over fruit in a large shallow dish. Cover and refrigerate for 1 hr, stirring occasionally, before serving.
