Southwest Taco Pie
- 1 deep dish pie crust
- 1 lb. ground chuck
- 3/4 c. chopped onions
- 1 pkg. taco seasoning mix
- 1 can refried beans
- 1 jar taco sauce, divided usage
- 1 c. shredded Cheddar cheese
- shredded lettuce
- chopped tomatoes
- Preheat oven and baking sheet to 400u0b0. Partially bake pie crust for 10 minutes; cool. Reduce oven temperature to 350u0b0. Brown ground chuck and onion in a skillet; drain fat.
- Stir in taco seasoning mix and a little bit of water.
- Combine refried beans and 1/2 cup taco sauce in a mixing bowl. Layer 1/2 meat mixture in bottom of pie shell, then half of bean mixture. Sprinkle cheese on top. Bake 25 minutes. Remove from oven; cool, then top with lettuce, tomatoes and sauce. Makes 6 servings.
