Macaroni Casserole With Broccoli And Meatballs
- 400 g macaroni
- 240 g sausages
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 tbsp tomato paste
- 1 tin tomatoes
- 1-2 stalks thyme, leaves plucked
- 500 g broccoli, cut into florets
- 150 g gouda cheese, grated
- Preheat oven to 400u0b0F. Cook the macaroni in boiling salted water, according to package instructions.
- Remove the sausage meat from the casings and form into small balls. Heat oil in a large frying pan and sear the balls until browned on all sides then remove and drain on paper towels.
- Saute the onion in the same pan then add the tomato paste and canned tomatoes. Bring to a boil, mashing the tomatoes slightly and cook for about 15 minutes. Add the thyme and season with salt, pepper and a pinch of sugar.
- Cook the broccoli in boiling salted water for about 3 minutes. Drain then mix with the tomato sauce, meatballs and macaroni. Transfer to a baking dish, sprinkle with cheese and bake for about 30 minutes until golden brown.
