String Bean And Mushroom Salad

  1. In a large saucepan bring water to a boil. Add beans and salt to taste.
  2. Cook about 5 minutes or until tender.
  3. Drain and cool. Wash and dry mushrooms; slice thinly.
  4. Prepare sauce by whisking together the mustard, vinegar, cumin, Tabasco, salt and pepper. Slowly add oil while whisking vigorously.
  5. In a salad bowl; place beans, mushrooms, onions and chives.
  6. Pour sauce over the vegetables and toss gently.
