String Bean And Mushroom Salad
- 1 qt. water
- 1 lb. tiny green beans or string beans, trimmed
- salt and pepper to taste
- 1/2 lb. fresh mushrooms
- 1 Tbsp. Dijon mustard
- 2 Tbsp. red wine vinegar
- 1/4 tsp. ground cumin
- 1/4 tsp. Tabasco
- 3 Tbsp. vegetable oil
- 1 c. sliced red onion
- 1/4 c. chopped fresh chives
- In a large saucepan bring water to a boil. Add beans and salt to taste.
- Cook about 5 minutes or until tender.
- Drain and cool. Wash and dry mushrooms; slice thinly.
- Prepare sauce by whisking together the mustard, vinegar, cumin, Tabasco, salt and pepper. Slowly add oil while whisking vigorously.
- In a salad bowl; place beans, mushrooms, onions and chives.
- Pour sauce over the vegetables and toss gently.
