Cherry Strudel
- 1 cup ricotta cheese
- 1/4 cup honey
- 1 None orange, peel grated
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 4 sheets phyllo dough
- 4 tbsp (1/2 stick) butter, melted (or no stick cooking spray)
- 1 can (15 oz) cherries, drained
- 1 tbsp slivered almonds
- None None Ice cream, to serve
- Preheat the oven to 400u0b0F. Grease a baking pan. Mix ricotta, honey, orange peel and spices in a medium bowl.
- Place 2 sheets phyllo on work surface. Brush with butter or spray with no stick cooking spray. Top with remaining phyllo, 2 sheets at a time, brushing with butter every 2 sheets.
- Spoon ricotta mixture along long edge of phyllo stack. Top with cherries. Roll up, folding ends in. Place seam-side down on prepared pan. Brush with butter. Sprinkle with almonds.
- Bake for 25-30 mins, until golden. Serve with ice cream.
