Cherry Strudel

  1. Preheat the oven to 400u0b0F. Grease a baking pan. Mix ricotta, honey, orange peel and spices in a medium bowl.
  2. Place 2 sheets phyllo on work surface. Brush with butter or spray with no stick cooking spray. Top with remaining phyllo, 2 sheets at a time, brushing with butter every 2 sheets.
  3. Spoon ricotta mixture along long edge of phyllo stack. Top with cherries. Roll up, folding ends in. Place seam-side down on prepared pan. Brush with butter. Sprinkle with almonds.
  4. Bake for 25-30 mins, until golden. Serve with ice cream.
