Hot And Sour Vegetable Soup

  1. Cook noodles in large saucepan of boiling water until tender; drain.
  2. Meanwhile, heat large nonstick saucepan on medium heat. Cook tom yum paste, lime leaves and chili pepper, stirring, until fragrant. Add 2 cups water and stock; bring to a boil, stirring. Reduce heat to low; simmer, uncovered, 5 mins.
  3. Add carrot, pepper, mushrooms, broccolini and snow peas to pan; simmer, uncovered, about 5 mins or until vegetables are tender.
  4. Stir in onion, lime juice and fish sauce; season to taste. Discard lime leaves and chili pepper. Divide noodles among serving bowls. Ladle soup over noodles; top with bean sprouts and herbs.
