Hot And Sour Vegetable Soup
- 3 oz dried soba noodles
- 1 tbsp tom yum paste
- 2 None kaffir lime leaves, crushed
- 1 None fresh long red chili pepper, halved
- 2 cups chicken stock
- 1 large carrot, cut into matchsticks
- 1 medium red pepper, seeded and thinly sliced
- 4 oz button mushrooms, thinly sliced
- 6 oz broccolini, coarsely chopped
- 4 oz snow peas, thinly sliced
- 2 None green onions, thinly sliced
- 1 1/2 tbsp lime juice
- 1 tbsp fish sauce
- 1/2 cup bean sprouts
- 1 tbsp fresh mint leaves
- 1 tbsp fresh cilantro leaves
- Cook noodles in large saucepan of boiling water until tender; drain.
- Meanwhile, heat large nonstick saucepan on medium heat. Cook tom yum paste, lime leaves and chili pepper, stirring, until fragrant. Add 2 cups water and stock; bring to a boil, stirring. Reduce heat to low; simmer, uncovered, 5 mins.
- Add carrot, pepper, mushrooms, broccolini and snow peas to pan; simmer, uncovered, about 5 mins or until vegetables are tender.
- Stir in onion, lime juice and fish sauce; season to taste. Discard lime leaves and chili pepper. Divide noodles among serving bowls. Ladle soup over noodles; top with bean sprouts and herbs.
