Cheddar–Chive Scones With Turkey And Brie
- 1 2/3 cups self-rising flour
- 1/2 cup butter, diced
- 1 cup shredded cheddar cheese
- 2 tbsp chopped chives
- 3/4 cup milk
- 7 oz shaved cooked turkey breast
- 3 1/2 oz brie cheese, thinly sliced
- 1/2 cup cranberry sauce
- Preheat oven to 350u0b0F. Lightly grease a baking sheet and line with parchment.
- Sift flour into a bowl. Rub in butter using fingertips until mixture resembles breadcrumbs. Stir in cheddar and chives. Make a well in the center of the flour mixture. Pour in milk all at once. Using a butter knife, quickly mix to a soft, sticky dough.
- Turn onto a lightly floured surface. Press or roll out until 1/2- thick. Using a 1 1/2-inch-ring cutter, cut rounds from dough. Arrange close together on baking sheet. Bake 12-15 minutes, until cooked and golden. Cool on a wire rack.
- Cut scones in half. Sandwich together with slices of turkey, brie and cranberry sauce.
