Macadamia Nut Cupcakes
- 1/2 cup butter, chopped, softened
- 1/3 cup brown sugar
- 2 None eggs
- 1 tsp vanilla extract
- 2 1/4 cups self-rising flour, sifted
- 1/2 cup light sour cream
- 1/2 cup 2% milk
- 1 cup macadamia nuts, chopped
- None None Crumble
- 1/4 cup macadamia nuts, chopped
- 2 tbsp rolled oats
- 2 tbsp brown sugar
- 1 tbsp maple syrup
- Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Mix in vanilla. Fold in flour alternately with sour cream and milk. Fold in macadamia nuts. Transfer to prepared liners.
- For the crumble, combine all ingredients in a small bowl. Sprinkle evenly over each cupcake. Bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
