Mussel Stir-Fry
- 1 tbsp oil
- 6 oz Chinese sausage, sliced (or substitute chorizo)
- 1 None onion, sliced
- 1 None long red chili pepper, sliced
- 3 cloves garlic, sliced
- 1 cup Chinese rice wine or sherry
- 1/4 cup light soy sauce
- 2 lbs mussels, cleaned and bearded
- 1 lb thin Chinese noodles
- 1/4 cup cilantro leaves, to serve
- Heat oil in a wok or large skillet on high heat. Add sausage, onion, chili pepper and garlic; stir-fry for 2-3 mins, until sausage starts to brown and onion is softened.
- Add rice wine and soy sauce; bring to a simmer. Add mussels; cover and cook for 3-5 mins, until mussels open. (Discard any that do not open.)
- Meanwhile, prepare the noodles according to package directions. Add to the wok and toss until combined and heated through. Sprinkle with cilantro.
