Angolan Chicken(Galirhamuamba)

  1. Combine chilies, ginger, oil, garlic, onions, salt, pepper, lemon juice, 1 cup water and oil; mix well.
  2. Place chicken pieces in mix and marinate at room temperature for 3 hours.
  3. Remove chicken and pat dry.
  4. Strain and reserve liquid and any solids. Brown chicken in remaining oil; add more oil if needed.
  5. Add solids from marinade and cook until onions are soft but not brown. Return chicken to pan and add 1/2 cup of the marinade and 1 cup water.
  6. Simmer 1/2 hour to 45 minutes.
  7. Serve with saffron rice.
