Angolan Chicken(Galirhamuamba)
- 1 (3 lb.) chicken, cut into pieces
- 3 to 4 fresh red or green chili peppers, skin removed and chopped fine
- 1/2 tsp. ground ginger
- 1 large onion, chopped fine
- 3 cloves garlic
- 1 c. lemon juice
- 2 c. water
- 6 Tbsp. oil
- salt and pepper to taste
- Combine chilies, ginger, oil, garlic, onions, salt, pepper, lemon juice, 1 cup water and oil; mix well.
- Place chicken pieces in mix and marinate at room temperature for 3 hours.
- Remove chicken and pat dry.
- Strain and reserve liquid and any solids. Brown chicken in remaining oil; add more oil if needed.
- Add solids from marinade and cook until onions are soft but not brown. Return chicken to pan and add 1/2 cup of the marinade and 1 cup water.
- Simmer 1/2 hour to 45 minutes.
- Serve with saffron rice.
