Soft Ginger Cookies
- 1 c. sugar
- 1 c. vegetable shortening
- 1 egg
- 2 c. dark molasses
- 2 Tbsp. vinegar
- 1 1/2 tsp. cinnamon
- 2 Tbsp. ginger
- 1/4 tsp. nutmeg
- 1 tsp. salt
- 7 to 8 c. flour
- 1 c. boiling water
- 4 tsp. baking soda
- Cream sugar and shortening together well.
- Set aside.
- Sift together spices, salt and 7 cups of the flour.
- Dissolve baking soda in boiling water.
- Add water mixture alternately with flour mixture to the sugar and molasses and combine well.
- Dough will be thick.
- Turn onto a floured board and knead in more flour if dough is sticky.
- Roll dough to 1/4-inch thickness and cut into rounds or desired shapes.
- Bake in a 375u0b0 oven on greased cookie sheets for 9 to 10 minutes.
- Makes 6 or 7 dozen cookies, depending on size of cookie cutter.
