Shrimp And Chanterelle Carbonara
- 14 oz spaghetti
- 3 tbsp olive oil
- 1 bunch parsley, half of bunch finely chopped
- 5 slices bacon (about 5 oz total), finely chopped
- 10 oz chanterelle mushrooms, cleaned
- 4 None eggs
- 3 tbsp whipping cream
- 9 oz shrimps, peeled
- Cook spaghetti in boiling salted water according to package instructions.
- Heat 2 tbsp oil in a skillet and saute the whole parsley leaves. Remove and drain on paper towels. Fry the bacon, after a few minutes add the chanterelles and cook for 5 mins with the bacon. Season with pepper.
- Drain spaghetti and return to the saucepan. Add the bacon and chanterelles. Whisk eggs with the cream, season, and add to spaghetti. Put saucepan on a low heat, stirring constantly, until the sauce slightly thickens. Remove from heat.
- Heat 1 tbsp oil in a skillet, saute prawns for 3-4 mins, turning. Stir chopped parsley through the spaghetti, add prawns and the sauteed parsley leaves.
