Lentil And Duck Breast Salad

  1. Cook the lentils according to package instructions. Add the carrot and curry powder 15 mins before the end of cooking time. Drain.
  2. Meanwhile, in a large bowl, mix together the walnuts, shallots and apple.
  3. In separate small bowl, mix together the mustard, vinegar and oil. Season to taste with salt and freshly ground black pepper.
  4. Add the lentil mix to the shallot and apple mix, add the duck breast, chopped parsley and dressing and toss well to combine. Serve in bowls garnished with the reserved parsley leaves.
