Spicy Lamb Noodle Stir Fry
- 1 1/2 lb lamb loin, cut into strips
- 1 tsp sesame oil
- 1 tbsp orange zest
- 2 tsp minced garlic
- 1 tsp grated ginger
- 1/2 cup light soy sauce
- 1 tbsp black bean sauce
- 1 tbsp brown sugar
- 9 oz dried wheat noodles
- 2 tbsp peanut oil
- 7 oz snow peas, sliced thinly lengthwise
- 1 None medium fresh red chili, sliced
- 1/4 cup beef stock
- Combine lamb with sesame oil, orange zest, garlic, ginger, soy sauce, black bean sauce and sugar in a large bowl. Set aside.
- Cook noodles in boiling water until just tender then drain. Set aside.
- Heat a little peanut oil in a wok over medium-high heat. Stir-fry snow peas until tender then remove from wok.
- Drain lamb from marinade, reserving marinade. Add a little more peanut oil to wok and stir-fry lamb, in batches, until browned and cooked through. Return snow peas to wok along with reserved marinade, chili and stock. Bring to a boil. Add noodles and stir-fry until heated through. Serve immediately.
