Buttermilk Scones With Balsamic Strawberries

  1. Preheat the oven to 425u0b0F. Lightly grease a baking pan. Sift flour into a large bowl. Rub in butter lightly using fingertips. Stir in granulated sugar.
  2. Add buttermilk and mix quickly to a soft, sticky dough. Do not over-mix.
  3. Turn onto a lightly floured surface. Knead gently. Roll out to 3/4-inch thickness. Using a 2-inch round cookie cutter, cut rounds from dough. Place close together on prepared pan.
  4. Bake for 12-15 mins, until scones sound hollow when tapped. Cool on a wire rack.
  5. Meanwhile, for the balsamic strawberries, heat butter in a medium skillet on high heat. Add brown sugar and cook for 3-4 mins, until caramelized. Stir in strawberries and vinegar. Cook for 1-2 mins, until strawberries soften.
  6. Whip the cream and vanilla paste until soft peaks form. Cut scones in half and serve topped with balsamic strawberries and vanilla cream.
