Queen Elizabeth'S Chicken
- 6 chicken breast fillets
- seasoned salt
- freshly ground pepper
- 6 tsp. finely chopped fresh parsley
- 6 slices Swiss cheese
- 6 slices smoked ham
- freshly cooked white, brown and wild rice mix
- canned apricot halves, drained
- 1/4 c. butter, melted
- 1 c. fresh bread crumbs
- 1 1/2 c. canned whole tomatoes, partially drained
- 3/4 c. heavy cream
- 1/4 c. dry white wine
- 1 tsp. salt
- 1 tsp. sugar
- 1/8 tsp. garlic powder
- 1/8 tsp. freshly ground pepper
- Preheat oven to 325u0b0.
- Season chicken with salt and pepper. Top each with 1 teaspoon parsley, 1 slice cheese, 1 slice ham. Roll tightly and brush with butter and roll in crumbs.
- Arrange compactly seam side down in square baking dish.
- Pour remaining butter on top and sprinkle with remaining crumbs.
- Cover and bake 45 minutes.
- Remove cover and bake until golden, about 30 minutes.
