Yorkshire Puddings With Gravy
- 2 None large eggs
- 2/3 cup milk
- 1 cup all-purpose flour
- 2 tbsp vegetable oil
- 3 tbsp butter
- 1 cup beef stock
- 1 tbsp light soy sauce
- Preheat oven to 425u0b0F.
- In a medium bowl, whisk eggs, milk and 3/4 cup flour until smooth.
- Heat oil and butter in a small saucepan over low heat until butter melts. Distribute 1/2 the oil mixture between 2 - 12-cup mini muffin pans. Place pans in oven for 1 min, or until very hot.
- Working quickly, distribute batter between muffin recesses. Bake for 10 mins, or until puddings rise and brown lightly.
- Meanwhile, reheat oil mixture in pan. Add remaining flour and cook, stirring, for about 4 mins, or until mixture thickens and bubbles. Gradually add stock and 1/3 cup water, stirring, until gravy boils and thickens. Stir in soy sauce.
- Serve puddings hot with gravy.
