Ginger Beef Stir-Fry
- 1 lb stir-fry beef
- 1 tbsp cornstarch
- 2 tbsp fish sauce
- 1 1/2 tsp vegetable or peanut oil
- 2 inch fresh ginger, peeled and cut into thin matchsticks
- 1 (15 oz) can baby corn, drained
- 4 None spring green onions, cut into 2 inch pieces
- 2 cloves garlic, crushed
- 1 bunch choy sum, cut into 2 inch pieces
- 1 tsp granulated sugar
- 1 1/2 lb cooked long-grain white rice
- 1/3 cup unsalted roasted peanuts, chopped
- Combine beef, cornstarch and 1 tbsp fish sauce. Heat a wok or large frying pan over high heat, add 3/4 tsp oil then add beef and stir-fry for 2 mins, or until browned. Remove from heat and wipe wok clean with paper towels.
- Heat remaining oil in wok over high heat, add ginger, baby corn, onion and garlic and stir-fry for 1 min. Add choy sum and stir-fry for 1 min, or until wilted. Add beef and any resting juices, sugar and remaining fish sauce to wok; stir-fry for 1 minute or until heated. Divide rice between serving bowls, add beef stir-fry, sprinkle with peanuts and serve.
