Curried Cod Fillet With Creamed Cabbage

  1. In a saucepan, cook the cabbage, stirring, for 2 mins. Remove from the heat and set aside.
  2. In a shallow dish, mix the breadcrumbs and curry powder together. Season the fish, dip in the beaten egg then in the breadcrumb mixture. Heat the oil in a frying pan and saute the fish over medium heat for 5 mins on each side. Remove the fish from the pan and drain on paper towels. Add the pineapple to the pan and cook for 1 min. Add the cabbage and warm through.
  3. To serve, arrange the fish and cabbage mixture on a plate and garnish with lemon wedges and parsley. Serve with boiled potatoes.
