Red Beans 'N Rice
- 4 cans New Orleans Style kidney beans, undrained
- 3 stalks celery, sliced
- 1 medium onion, chopped
- 1/4 tsp. cayenne pepper
- 1/4 tsp. cumin
- 1 large can stewed tomatoes, mashed up
- 8 slices bacon, fried and crumbled (save grease)
- 1 lb. beef sausage, fried (or hamburger)
- picante sauce to taste
- salt and pepper to taste
- 1 green pepper, chopped
- Fry bacon; remove from pan to paper towel.
- In bacon grease, fry onions, green pepper and celery.
- Sprinkle in cayenne pepper and cumin.
- In a separate pan, fry sausage.
- Drain and discard grease.
- Stir in tomatoes and browned veggie mixture, including bacon grease.
- Heat to simmer.
- Stir in bacon and beans.
- Heat to simmer again.
- Add salt, pepper and picante sauce.
- Serve over rice.
