Red Beans 'N Rice

  1. Fry bacon; remove from pan to paper towel.
  2. In bacon grease, fry onions, green pepper and celery.
  3. Sprinkle in cayenne pepper and cumin.
  4. In a separate pan, fry sausage.
  5. Drain and discard grease.
  6. Stir in tomatoes and browned veggie mixture, including bacon grease.
  7. Heat to simmer.
  8. Stir in bacon and beans.
  9. Heat to simmer again.
  10. Add salt, pepper and picante sauce.
  11. Serve over rice.
