Double Chocolate Dessert
- 1/3 cup cornstarch
- 2 tbsp granulated sugar
- 2 cups milk
- 2 oz white chocolate, finely chopped
- 1 tsp cocoa powder
- 1 oz dark chocolate, finely chopped, plus 1/2 oz grated chocolate to garnish
- 1 tbsp kirsch
- 2/3 cup whipping cream
- 4 None cocktail cherries, to garnish
- Use a muffin pan to help hold 4 parfait glasses at an angle. Mix 1/2 the cornstarch, 1 tbsp sugar and 1/4 cup milk until smooth. Place 3/4 cup milk in a saucepan and gently heat. Add the white chocolate and melt. Add the cornstarch mixture and simmer for 1-2 mins until thickened. Carefully divide the mixture between the 4 glasses. Chill for 30 mins at an angle.
- Mix 1 tsp cocoa powder, the remaining sugar, cornstarch and 1/3 cup milk until smooth. Heat the remaining milk in a saucepan then add the dark chocolate and simmer for 1-2 mins, stirring. Add the kirsch. Set the glasses upright. Carefully pour in the dark chocolate on top of the white chocolate layer. Chill for 45 mins.
- Whip the cream until very stiff. Transfer to a piping bag with a wide, star-shaped tip and pipe a peak into each glass. Top with a cherry and sprinkle with grated chocolate. Serve.
