Spinach And Cheese Pie
- 2 tbsp olive oil
- 2 bunches fresh spinach, trimmed, chopped
- 4 None spring onions, finely sliced
- 4 None large eggs, lightly beaten
- 8 oz feta cheese, crumbled
- 5 oz ricotta cheese
- 2 oz Parmesan cheese, grated
- 1 oz parsley, chopped
- 1/4 tsp nutmeg
- 8 None sheets phyllo pastry
- 4 tbsp butter, melted
- None None salad, to serve
- Preheat oven 375u0b0F. Lightly grease an 8-inch square casserole dish or cake pan.
- For the filling, heat oil in a large frying pan on high. Saute spinach and onions 4-5 mins, until spinach is wilted. Drain well and cool slightly. Transfer to a large bowl and mix in eggs, cheeses, parsley and nutmeg. Season to taste.
- Brush 4 sheets of phyllo with butter and fold in half. Layer in pan and pile with filling. Brush remaining phyllo with butter, fold in half and layer over filling. Bake 20-25 mins, until crisp, set and golden. Slice and serve with salad.
