Spicy Meatballs With Rice
- 1 lb pork sausages, casings removed
- 4 tbsp oil
- 1 lb mushrooms, cut in 1/2
- 2 None green bell peppers, deseeded and cut into chunks
- 2 None onions, chopped
- 2 cloves garlic, chopped
- 1 lb risotto rice
- 1 cup spicy tomato sauce
- 1 pinch cayenne pepper
- 1 - 13.5 oz can red kidney beans, drained
- 1 - 13.5 oz can sweet corn, drained
- None None fresh parsley sprigs, to garnish
- Shape the sausage into small meatballs. Heat 2 tbsp oil in a large frying pan and cook the meatballs for 5 mins, turning. Remove from the pan and set aside.
- Add the mushrooms and peppers to the pan and saute for 5 mins until softened and beginning to color. Set aside. Add the remaining oil to the pan and saute the onions for 5 mins, adding the garlic for the last min. Stir in the rice then add 7 cups water. Bring to a boil, reduce the heat to a gentle simmer and stir in the spicy tomato sauce and cayenne. Cook gently for 20-25 mins, stirring occasionally, until the rice is just tender. Add a little more water if the mixture is dry before the rice is cooked.
- Add the meatballs, mushrooms, peppers, beans and corn. Mix well and heat through for 5 mins. Season to taste and serve garnished with parsley.
