Mini Lamb And Eggplant Pizzas
- 6 None small pizza bases
- 2 None tomatoes, sliced
- 1 tbsp olive oil
- 1 None medium eggplant, thinly sliced
- 2 None lamb noisettes (boneless lamb chops), flattened
- 1/2 cup plain yogurt
- 1 tbsp fresh mint leaves, chopped
- 1 tsp lemon juice
- 1 bunch arugula, washed, stems removed
- Preheat oven to 400u0b0F. Place pizza bases on a greased baking tray. Arrange tomatoes over top, leaving a narrow border around edges. Drizzle with olive oil. Cook according package instructions.
- Preheat broiler. Brush eggplant with oil. Broil for 3 mins per side, until golden and tender. Brush lamb with oil. Season. Broil for 3-4 mins per side, or until cooked to your liking. Slice thinly.
- In a bowl, combine yogurt, mint and lemon juice. Season. Top pizzas with eggplant, arugula and lamb. Drizzle with yogurt mixture. Serve warm.
