Cheese, Dill, And Smoked Salmon Blinis
- 3/4 cup, plus 2 tbsp self-rising flour
- 3/4 cup milk
- 1 None large egg
- 2 oz cheddar, grated (about 1/2 cup)
- 2 tbsp fresh dill leaves, plus extra sprigs, for garnish
- 2 tbsp butter, melted
- 1/2 cup light cream cheese
- 3 1/2 oz smoked salmon slices
- None None lemon wedges, to serve
- Sift flour into a large bowl. Make a well in the center. In a small bowl, whisk together milk and egg. Season to taste. Gradually whisk milk mixture into flour to make a smooth batter. Stir in cheddar and dill. Cover and allow to rest for 20 mins.
- Heat a large non-stick skillet on medium. Brush with butter. Drop teaspoonfuls of batter into the hot pan in batches, allowing room for spreading. Cook for 1-2 mins, until bubbles appear. Turn and cook for 1 min. Transfer to a rack to cool. Continue with remaining butter and batter.
- Spread blinis with cream cheese. Top with smoked salmon and dill. Serve with lemon wedges.
