Cheese, Dill, And Smoked Salmon Blinis

  1. Sift flour into a large bowl. Make a well in the center. In a small bowl, whisk together milk and egg. Season to taste. Gradually whisk milk mixture into flour to make a smooth batter. Stir in cheddar and dill. Cover and allow to rest for 20 mins.
  2. Heat a large non-stick skillet on medium. Brush with butter. Drop teaspoonfuls of batter into the hot pan in batches, allowing room for spreading. Cook for 1-2 mins, until bubbles appear. Turn and cook for 1 min. Transfer to a rack to cool. Continue with remaining butter and batter.
  3. Spread blinis with cream cheese. Top with smoked salmon and dill. Serve with lemon wedges.
