Rhubarb And Apple Crumble
- 1 lb sliced rhubarb
- 1 None green apple, peeled, cored, sliced
- 1 cup sugar
- 1/4 tsp ground ginger
- None None Topping
- 1/2 cup all-purpose flour, sifted
- 1 1/2 cups rolled oats
- 1/2 cup desiccated coconut
- 1/3 cup sliced almonds
- 4 1/2 tbsp butter
- 1 tbsp golden syrup
- None None heavy cream, ice cream or custard, to serve (optional)
- Preheat oven to 350u0b0F.
- Bring rhubarb, apple, sugar, 1 tbsp water and ginger to a boil, stirring. Reduce heat and simmer, stirring occasionally, for 10-15 mins, or until mixture is thick and pulpy. Transfer to a large baking dish.
- For the topping, combine flour, oats, coconut and almonds. Heat butter and syrup in a small saucepan over low heat, stirring, for 1-2 mins, until melted. Pour into flour mixture and mix well. Sprinkle evenly over rhubarb and apple mixture. Bake for 10-15 mins, or until golden brown.
- Serve crumble warm with heavy cream, ice cream or custard, if desired.
