Salmon With Vegetables And Fingerling Potatoes
- 1 lb fingerling potatoes, scrubbed
- 6 tbsp butter
- 2 cloves garlic, peeled and crushed
- 2 tbsp chopped fresh chives
- 1/2 None lemon, juiced
- 4 None salmon filets, about 1/4 lb each
- 1/2 lb plum tomatoes
- 1/3 lb green beans, trimmed and steamed
- 1/3 lb broccoli, trimmed and steamed
- 2 tbsp sliced almonds, lightly toasted
- Place the potatoes in a large saucepan of water and bring to a boil. Simmer, partially covered for 10-15 mins, until just tender. Drain and return to pan. Add 3 tbsp of the butter and the garlic, chives and lemon juice. Toss to combine.
- Heat remaining butter in a large frying pan on high. Cook the salmon for 3-4 mins on each side, until golden and cooked. Remove from the pan and set aside. Cook the tomatoes in the same pan for 2-3 mins, until they start to soften.
- Serve the fish with the potatoes, tomatoes, green beans and broccoli. Drizzle with the pan juices and sprinkle with the almonds.
