Berry Crumble Cake

  1. Preheat the oven to 325u0b0F. Grease and line a 9 inch square baking pan.
  2. Beat together 3/4 cup of the butter and 1 cup of the sugar until pale and creamy. Beat in the eggs, a little at a time. Sift 2 cups of the flour, the baking powder and mixed spice into the bowl and stir to combine. Add the gooseberries.
  3. Transfer to the baking pan and level the surface. Rub the remaining butter into the remaining flour and stir in the remaining sugar and the cinnamon. Sprinkle into the pan and bake for 40 minutes or until just firm to the touch. Leave to cool in the pan.
