Christmas Muffins
- 2 1/2 cups self-rising flour
- 7 tbsp butter, chopped
- 1 cup sugar
- 1 1/4 cups buttermilk
- 1 None egg, beaten
- 1 cup mixed glace fruit, coarsely chopped
- 8 oz ready-to-roll white fondant
- 2 tbsp strained apricot jam, warmed
- Preheat the oven to 400u0b0F. Line 12-cup muffin pan with paper liners.
- Sift flour into medium bowl; rub in butter. Gently stir in sugar, buttermilk and egg. Gently stir in chopped glace fruit. Spoon into muffin cups.
- Bake about 20 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- Roll fondant out to 1/8-inch thickness. Using a 1 3/4-inch star cutter, cut out 12 stars. Brush tops of muffins with apricot jam; top with fondant stars. Dust with sifted powdered sugar.
