Mixed Berry Bran Muffins

  1. Preheat oven to moderate, 350u0b0F. Lightly spray nine cups of a muffin pan with oil. Cut nine 5-inch squares of parchment and fit into muffin cups.
  2. In a large bowl, combine sifted flour and oat bran. Stir in sugar.
  3. In a small bowl, combine buttermilk, oil, and egg. Add to flour mixture. Fold in frozen berries, until combined-do not over mix!
  4. Spoon mixture into prepared muffin cups. Bake for 20-25 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Serve dusted with powdered sugar.
