Beef Diane

  1. Heat oil in large saucepan. Working in batches, saute beef until browned. Add garlic and onion. Cook, stirring, until onion is soft. Add tomatoes, stock and Worcestershire sauce. Simmer, covered, for 1 hour 30 mins, until beef is tender.
  2. Add heavy cream, parsley and brandy. Simmer, uncovered, for about 5 mins, or until thickened slightly.
  3. Serve with pasta, sprinkled with extra chopped parsley.
