Citrus Rice Pudding
- 2 1/4 cups fat free milk
- 1 None vanilla bean, halved lengthwise
- 2 tsp finely grated orange peel
- 1 tsp finely grated lemon peel
- 1 tsp finely grated lime peel
- 2 None eggs
- 1 None egg white
- 1/2 cup sugar
- 1 1/2 cups cooked white medium-grain rice
- Preheat the oven to 325u0b0F. Grease shallow oval 6-cup baking dish.
- Bring milk, vanilla bean and peels to a boil in medium saucepan. Remove from heat. Let stand, covered, 5 mins. Discard vanilla bean.
- Meanwhile, whisk eggs, egg white and sugar in medium bowl. Gradually whisk hot milk mixture into egg mixture.
- Spread rice into dish. Pour egg mixture carefully over rice. Place dish in large baking pan. Add enough boiling water to pan to come halfway up side of baking dish.
- Bake pudding about 1 hour or until set.
