Veal Chops With Pear Relish And Spinach
- 4 None small pears, peeled, cored, coarsely chopped
- 1 None medium red onion, peeled, coarsely chopped
- 1 1/2 tbsp butter
- 1 tbsp red wine vinegar
- 1/4 cup firmly packed brown sugar
- 4 None cloves
- 1/4 tsp ground allspice

- 4 (7 oz) veal chops
- 3 1/2 tbsp butter
- 14 oz baby spinach
- To make the pear relish, bring pears, onion, butter and vinegar to a boil. Reduce heat and simmer, covered, for 20 mins, or until pulpy. Add sugar, cloves and allspice. Stir over low heat until sugar dissolves then bring back to a boil. Reduce heat and simmer, stirring occasionally, for 20 mins, or until thickened slightly.
- Oil a grill pan or large frying pan and place over high heat. Cook veal chops until browned on both sides and cooked to your liking.
- Meanwhile, melt butter in a large saucepan over medium-high heat. Cook spinach, tossing, until just wilted.
- Serve veal chops with spinach and pear relish.
