Panna Cotta With Orange Gelée

  1. Bloom 1 tsp gelatin in 1 tbsp ice water for 5 mins. Mix with 2 tbsp orange juice. Gently heat until melted then whisk in remaining orange juice. Distribute between 4 - 8.5 oz molds. Cover and chill for 1 hour.
  2. Meanwhile, bloom remaining gelatin in 1 tbsp ice water. In a medium saucepan, combine heavy cream, sugar, orange zest and vanilla. Stir over low heat until sugar dissolves. Bring almost to boiling point then remove from heat. Whisk in bloomed gelatin until gelatin melts. Set aside for 5 mins. Discard zest. Chill for 15 mins then distribute over orange gelee. Cover and chill overnight, until set.
  3. Invert panna cotta onto serving plates. Dip molds in hot water for a few seconds to loosen, if necessary. Serve garnished with orange segments.
