Sandwich Platter

  1. Spread butter over bread. Combine tuna, cream cheese, celery and 1 spring onion. Season. Top 2 slices of bread with carrot, tuna mixture then 2 more slices of bread. Trim crusts then cut each into 3.
  2. Combine avocado, sweet corn, cottage cheese and remaining spring onion. Season. Top 2 slices bread with pastrami, avocado mixture and remaining bread. Cut into triangles.
