Chicken And Vegetable Pasta
- 14 oz cavatappi pasta
- 2 tbsp olive oil
- 1 None onion, sliced
- 1 None garlic clove, crushed
- 8 oz chicken breast, thinly sliced
- 1 None red pepper, seeded, sliced
- 1 None stalk celery, sliced
- 1 None zucchini, sliced
- 1/2 cup white wine
- 1 head broccoli, cut into florets
- 1 14 oz can diced tomatoes
- 1/2 cup chicken stock
- 1/4 bunch basil leaves, roughly chopped
- 1/2 cup shaved Parmesan and crusty bread, to serve
- Cook pasta in a large pot of boiling salted water, following packet instructions. Drain well, return to pot, cover and set aside.
- Meanwhile, heat oil in a large pan and saute onions and garlic for 4-5 mins or until onions are tender. Add chicken and saute for 2-3 mins. Stir in pepper, celery and zucchini. Cook for 3 mins. Stir in wine and cook for 2 mins or until reduced.
- Mix broccoli, tomatoes and stock into the chicken mixture and simmer for 3-4 mins until broccoli is tender. Toss sauce and basil into the pasta in the pot and season to taste.
- Serve topped with shaved Parmesan and accompany with crusty bread.
