Peppered Steak With Squash Fries
- 4 (6 oz) lean beef steaks, 1 inch thick, at room temperature
- 1 tbsp coarsely ground black pepper
- 1 large pinch dried rosemary or oregano
- 1 lb winter squash, peeled, deseeded, cut into thick French fries
- 1 tbsp olive oil
- None None steamed green beans, to serve
- Preheat oven to 425u0b0F. Line a baking tray with foil. Toss squash in oil and arrange on prepared baking tray. Bake for 20 mins, turning occasionally, until golden and tender.
- Meanwhile, pat steaks dry with paper towels then coat in pepper and dried herbs. Brush a grill pan with oil and place over high heat. When just beginning to smoke, lightly salt steaks. Cook for 3 mins then flip over and cook for 2 mins, or until cooked to your liking.
- Serve steaks with squash fries and steamed green beans.
