Chicken Burgers With Homemade Ketchup
- 150 g tomatoes, skinned and pureed + 1 tomato, sliced
- 1/2 tsp mustard
- 1/2 tsp horseradish
- None None Pinch of sugar
- None None Tabasco, to taste
- 1 None chicken breast fillet (about 120g)
- 1/2 tsp dried rosemary
- 1 tsp butter
- 2 None wholewheat bread rolls, halved
- 4 None lettuce leaves
- 100 g cucumber, sliced
- None None Fresh flat-leaf parsley, for garnish
- Place the diced tomatoes in a small saucepan with the horseradish, mustard and sugar. Simmer over medium-low heat until slightly thickened, stirring occasionally. Season to taste with the pepper sauce, salt and pepper. Set aside to cool.
- Sprinkle the chicken with salt, pepper and the rosemary. Heat the butter in a large nonstick skillet over medium-high heat, add the chicken and cook for 5 mins per side until golden brown and cooked through.
- Spread the bottom halves of the rolls with the ketchup. Layer the chicken, lettuce, tomato slices and a few cucumber slices on top and sandwich with the top halves of the rolls.
- Arrange the remaining cucumber on two plates, top with the burgers, garnish with the parsley and serve.
