Chocolate Peanut Bars

  1. Preheat oven to 400u0b0F. Grease and line base and sides of an 8x12 inch rimmed baking pan.
  2. Arrange pie dough on a baking tray and prick all over with a fork. Bake for 10 mins, or until light golden brown and almost cooked through.
  3. Place hot pastry pieces, side-by-side, on a flat cutting board. Cut to fit 8x12 inch pan then place in base of pan. Spread evenly with jam.
  4. Reduce oven to 350u0b0F.
  5. Whip egg whites to soft peaks. Gradually add sugar, beating until thick and glossy. Stir in cake crumbs, cocoa powder, vanilla then peanuts. Spread over jam. Bake for 40 mins.
  6. Let cool in pan then cut into bars. Dust with powdered sugar before serving.
