Raspberry And Yogurt Parfait

  1. Preheat oven to 425u0b0F. Line a baking tray with parchment paper.
  2. Combine honey and olive oil in a small saucepan over low heat. Cook, stirring, for 2 mins, or until combined and smooth. Stir in oats, pumpkin seeds and sunflower seeds. Transfer to prepared tray and bake for 10 mins. Let cool then fold in strawberries and shredded coconut.
  3. Combine raspberries and sugar in a small bowl.
  4. Layer granola, yogurt and raspberry mixture in 4 serving glasses, starting and finishing with granola. Serve.
