Raspberry And Yogurt Parfait
- 2 tbsp honey
- 2 tsp olive oil
- 2/3 cup rolled oats
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp coarsely chopped dried strawberries
- 1 tbsp shredded coconut
- 6 oz frozen raspberries
- 2 tbsp granulated sugar
- 2 1/2 cups low-fat yogurt
- Preheat oven to 425u0b0F. Line a baking tray with parchment paper.
- Combine honey and olive oil in a small saucepan over low heat. Cook, stirring, for 2 mins, or until combined and smooth. Stir in oats, pumpkin seeds and sunflower seeds. Transfer to prepared tray and bake for 10 mins. Let cool then fold in strawberries and shredded coconut.
- Combine raspberries and sugar in a small bowl.
- Layer granola, yogurt and raspberry mixture in 4 serving glasses, starting and finishing with granola. Serve.
