Quinoa And Berry Pudding

  1. Bring apple juice and 1/4 cup water to a boil. Add quinoa, stirring, and return to a boil. Reduce the heat and simmer until most of the liquid has been absorbed. Drain then return to the pan. Add applesauce, lemon zest and juice, cashews, cardamom and a pinch of sugar.
  2. Divide pudding between 4 bowls. Thread 1/2 the raspberries and 1/2 the blueberries onto 4 skewers. Serve each pudding with a fruit skewer then scatter the remaining raspberries and blueberries and the strawberries over the pudding. Decorate with mint leaves and dust with cinnamon.
