Savory Beef Muffins

- 1 tbsp olive oil
- 1/4 lb ground beef
- 1/4 cup barbecue sauce
- 1/4 cup sun-dried tomatoes
- 2 oz feta cheese, crumbled
- None None For the Batter
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup milk
- 2 None eggs, lightly beaten
- 1/2 cup olive oil
- 2 oz Cheddar cheese, grated
- None None tomato sauce, to serve
- Preheat oven to 400u0b0F. Lightly grease and line a 12-cup muffin pan.
- To make the filling, heat oil in a large frying pan over high heat. Add ground beef. Brown for 4-5 mins. Add barbecue sauce, tomatoes and feta. Let cool slightly.
- Sift flour and baking powder into a large bowl. Add milk, eggs and oil. Whisk until just combined. Half-fill muffin recesses with batter. Distribute filling between recesses then cover with remaining batter. Sprinkle with grated cheese. Bake for 15-20 mins, until golden brown.
- Serve hot or cold with tomato sauce.
