Bacon And Cheese Rice Cake
- 1 tbsp olive oil
- 1 None large green pepper, chopped finely
- 4 slices bacon, sliced thinly
- 2 cloves garlic, peeled and crushed
- 2 cups cooked white medium-grain rice
- 1 cup frozen sweetcorn, defrosted
- 4 None green onions, thinly sliced
- None None cooking-oil spray
- 1 cup cheddar cheese, coarsely grated
- 3 None large eggs, beaten lightly
- Heat a medium 8 inch frying pan over a medium heat with the oil, then add the pepper, bacon and garlic and cook stirring, until the pepper softens.
- Combine the cooked rice, sweetcorn, green onions and pepper mixture in large bowl.
- Spray the same pan with cooking-oil spray. Spoon the rice mixture evenly into the pan and sprinkle with cheese. Pour the eggs evenly over the rice mixture and cook over a medium heat, loosely covered with foil or a lid, for about 10 mins or until the base is golden brown.
- Preheat the broiler.
- Place the pan under the broiler (shielding the handle with foil, if necessary) for about 5 mins or until the rice cake is golden and set.
- Invert the rice cake onto a chopping board, cut into wedges and serve with a green salad.
