Penne With Chicken And Sun-Dried Tomatoes

  1. Cook the pasta in boiling, salted water for 10-12 mins. Meanwhile, heat 1 tbsp oil in a pan, add the onion and garlic and saute over medium heat for 5-6 mins until soft. Add the spinach and 1/2 cup of water and simmer for 2-3 mins. Set aside.
  2. Drain the pasta. Heat 3 tbsp oil in a separate frying pan, add the chicken and cook over a medium-high heat for 4-5 mins, until cooked through. Season. Mix the sun-dried tomatoes and chicken into the spinach mixture then fold in the penne. Divide between 4 plates and garnish with pink peppercorns. Serve.
